Pesto Chicken This recipe is more a preparation than a recipe. It involves a quick and easy marinade of store bought or fresh made pesto to liven up boneless, skinless chicken. The pesto gives a surprising amount of nutty, slightly salty flavor to the chicken without adding unnecessary fat. Ingredients: boneless, skinless chicken pesto Wash and pat dry desired number of pieces of boneless, skinless chicken - either white or dark meat. Place pieces in a mixing bowl and add one or two tablespoons pesto. Pesto can be any favorite store bought or fresh made. I usually use a pesto of basil and pine nuts. Mix chicken to coat thoroughly. Add more pesto if necessary, but remember that a little goes a long way. Chicken can be grilled, baked or browned in a sautee pan. Note: the pesto already has oil in it, so no additional oil should be necessary for cooking.
