Kaffir Lime Ice Cream Don't let the number of leaves fool you - this ice cream comes out creamy and cool with a lingering kaffir lime taste. It's not overpowering in any way. 1 cup heavy cream 1 cup milk 1/3 cup sugar 1 teaspoon vanilla extract 20 to 30 fresh kaffir lime leaves Clean and dry fresh kaffir lime leaves. Bruise them or run a knife over them coarsely to allow flavor release. In a small saucepan, heat heavy cream with kaffir lime leaves. Stir constantly until the cream scalds. Add vanilla extract. Allow to cool fully. Combine with milk and sugar and add to ice cream maker. Churn according to ice cream maker directions. Serve soft or store in freezer to serve hard set later.
