Chicken and Prosciutto in Vodka Sauce 1 Tbsp extra virgin olive oil 4 slices prosciutto, torn to shreds 1 chicken breast, thinly sliced salt and pepper - pinch each 1/2 stick of butter 1 medium onion, finely diced 2 cloves garlic, finely diced 1/2 cup vodka 1 jar marinara sauce 1/2 pint heavy cream Heat olive oil in a large sauce pan with high lip. Saute thinly sliced chicken until fully cooked. Add prosciutto and continue to saute for another minute. Season with salt and pepper, light on the salt as prosciutto is salty already. Add butter, allow to melt. Add garlic and onion, saute until onion is translucent and soft. Add vodka to pan, carefully, depending on the pan the vodka may ignite. Continue to cook over medium heat several minutes, allowing alcohol to cook off. Add jar of marinara sauce, stir slowly - allowing sauce to come to a simmer. Season with salt and pepper to taste. Finish with cream, stirring and allowing sauce to come to a simmer before removing from heat. Serve immediately over freshly cooked pasta.
