Bruschetta with Strawberries and Peaches 1 loaf baguette bread, cut into 1/2 inch slices extra-virgin olive oil 1/2 cup fresh strawberries 1/2 cup fresh peaches 1 tsp. sugar pinch of salt Prepare strawberries and peaches by finely dicing to approximetely 1/8 inch x 1/8 inch. Toss in bowl with sugar to sweeten and salt to bring out flavor. Refrigerate until bruschetta is ready. Preheat the oven (or grill) to 400 degrees F Arrange the baguette slices on a baking sheet (or heavy duty aluminum foil if on grill). Brush each slice on both sides with olive oil. Bake until the bread is pale golden and crisp, about 5 to 10 minutes. Spoon fruit on the toasts. Place on a serving platter and serve immediately.
